Wool Roll Bread Recipe with Cherry and Chocolate Filling

2 cups bread flour

1/3 cup lukewarm whole milk

1/3 cup heavy cream

1 egg

2 tbsp sugar

2 tbsp unsalted butter

1 tsp instant fast rise yeast

1 tsp salt

1/2 cup chopped dried cherries

1/2 cup semi-sweet chocolate chips


  1. In a stand mixer with a dough hook attachment, add flour, sugar, salt, milk, cream, yeast, and egg. Mix on medium low for about 6 minutes.
  2. Add butter and mix on medium low for an additional 6 minutes or until the dough becomes elastic and no longer sticks to the bowl or hands.
  3. Place the dough in a bowl and cover with plastic wrap. Allow it to rise until it has doubled in size.
  4. Once the dough has doubled in size, knead it for about a minute and shape it into a circle using a rolling pin or your hands.
  5. Cut the dough into 5 equal pieces and roll each piece into a ball. Cover each ball with plastic and allow them to rest for 15 minutes.
  6. Roll each ball into an oblong shape and make cuts into the dough starting from the middle towards the top of the dough. These cuts will create thin fringes, which when rolled, will create ridges.
  7. On the bottom half of the flattened dough, add the chopped dried cherries and semi-sweet chocolate chips.
  8. Fold the sides and bottom of the dough, then roll it up.
  9. Place each rolled dough into an 8-inch springform pan that has been lined with parchment paper. Cover with plastic wrap and allow them to rise until they have doubled in size.
  10. Preheat the oven to 340°F.
  11. Brush the dough with heavy cream and place it in the oven. Bake for about 15 minutes or until the bread is golden brown.
