1 sweet potato

1 ¼ cup yellow cornmeal

¾ cup all purpose flour

1 cup sugar

2 tsp baking powder

½ tsp baking soda

½ tsp salt

1 ¼ cups buttermilk

¼ cup canola oil

1 stick melted unsalted butter, plus 1 tbs for the skillet

2 beaten eggs

Instructions

  1. Preheat oven to 400°F.
  2. Poke sweet potato with a fork and microwave on high for 6 minutes. If not tender, microwave for another minute. Let cool.
  3. Halve the sweet potato, scoop out flesh, and mash.
  4. Place cast iron skillet in preheated oven for 10 minutes.
  5. Mix eggs, buttermilk, canola oil, melted butter, and mashed sweet potato until smooth.
  6. In another bowl, combine cornmeal, flour, sugar, baking powder, baking soda, and salt.
  7. Fold dry ingredients into wet mixture until just combined.
  8. Let batter rest for 5 minutes.
  9. Remove skillet from oven, add 1 tbsp butter, and melt.
  10. Pour batter into skillet and bake for 15-20 minutes or until a toothpick comes out with few crumbs.
  11. Cool cornbread in skillet for 10 minutes before slicing.
