Smothered Pork Chops Ingredients
I always start with a brine because pork chops are pretty lean and need extra moisture. The brine takes at least 2 hours. You can skip this step if you like, but I definitely recommend it.
Brine for the Pork Chops
- 4 full cups of lukewarm water
- ¼ cup of salt
- 4 pieces of pork chops (1 pound)
Dredge for Pork Chops
- 2 full cups of buttermilk
- 1 full cup of all purpose flour
- 1 tsp salt
- 1 tsp of black pepper
- 1 tsp of garlic powder
- 1 tsp of onion powder
- 1/2 tsp of cayenne
- Oil for frying
Gravy
- 1 onion cut or sliced
- 2 full cups of chicken stock
- ¼ cup of oil
- 2 tablespoons of butter
- ¼ cup flour from pork chops
- 1 tsp of salt
- 1 tspof black pepper
- 1 tsp of garlic powder
- 1 tsp of dried thyme
Directions To Make Smothered Pork Chops
Step 1: In a container, add water and salt for the brine. Let the salt dissolve in the water, and then put pork chops in it.
Step 2: Put the brine with pork chops in the refrigerator for about 2 hours. Let the pork chops soak the brine.
Step 3: After 2 hours, take the pork chops out and fry them in a skillet for about 3-4 minutes on medium heat until they turn golden brown in color.
Step 4: Take the pork chops off the skillet and put them on a plate.
Step 5: Clean the skillet thoroughly.
Step 6: Add ¼ cup of oil to the skillet and let it become heated. Add sliced onions to the skillet and cook them on a medium heat for about 15 minutes.
Step 7: Once the onions are properly caramelized, remove from skillet.
Step 8: Add butter and let it melt. Then add ¼ cup of flour from the fried pork chops breading.
Step 9: Whisk for several minutes.
Step 10: Add chicken stock and whisk for several minutes to combine all of the flour and to remove any clumps.
Step 11: Add black pepper, garlic powder, dried thyme, and salt.
Step 12: Whisk all the ingredients together for a few minutes until the gravy starts to thicken.
Step 13: After about 5 minutes, add pieces of pork chops to the skillet and layer the gravy over the piece of pork chops.
Step 14: Spoon the gravy over the chops and cover. Cook over medium low heat for 10 minutes.
Step 15: Serve and enjoy the flavorful and luscious pork chops smothered in caramelized onion to your family and friends.
