  • 4 8oz packages of regular cream cheese – room temperature
  • ¼ cup sour cream – room temperature
  • 1 ½ cups powdered sugar
  • 1 ¼ cup heavy cream
  • 2 tsp fresh lemon juice
  • 1 tsp vanilla extract

Apple mixture:

  • 2 Granny Smith apples
  • 2 Fuji apples
  • ½ cup sugar
  • ¼ cup water
  • 1 tbs unsalted butter
  • ½ tsp vanilla extract


  • 1 ½ cups crushed Graham crackers
  • 1 cup walnuts
  • ½ cup brown sugar
  • 1 stick unsalted butter - melted


  1. Make the caramel sauce. It's super easy to make and only takes a matter of minutes!
  2. In a food processor, pulse the walnuts until tiny pieces; mix with crushed Graham crackers, melted butter, and brown sugar.
  3. Press the mixture into a 9-inch springform pan and place in the freezer.
  4. In a stand mixer, combine the cream cheese, powdered sugar, lemon juice, and vanilla; mix until smooth.
  5. In a separate stand mixer bowl, whip the heavy cream until stiff peaks form; gently fold into the cream cheese mixture.
  6. Pour the mixture over the crust and level; refrigerate overnight to set.
  7. Peel and thinly slice apples; melt butter in a skillet and cook apples with sugar, water, and vanilla until soft. Allow to cool.
  8. Release the cheesecake from the springform pan and top with the cooled apple mixture.
  9. Drizzle or pour the caramel sauce over the apples.
  10. Use a clean, wet knife to slice the cheesecake.
  11. Serve and enjoy!
