    What are Liege waffles?

    Liege waffles are denser than the Belgian waffles that most of us in America are familiar with eating. They are made using a brioche dough with pearl sugar being added to give them their distinctive sweetness and crunchiness. Liege waffles are often topped with fruits for breakfast or eaten plain as a dessert snack.

    What is Pearl Sugar?

    Pearl sugar is a specialty sugar that is typically used for baking. It is made by compressing sugar into irregularly shaped small clumps. They add texture and crunch to waffles, cookies, cakes, and many other baked goods. It’s not easy to find Belgian pearl sugar in stores, so I typically buy it on Amazon.

    Liege waffles are a delicious and unique variation of traditional Belgian waffles, thanks to the addition of pearl sugar. By following this simple recipe, you can easily make your own Liege waffles at home and impress your family and friends with your culinary skills.     How to Make Liege Waffles

    1. Using a stand mixer, add all dry ingredients to mixing bowl and combine. Note: Use the paddle attachment at this stage.
    2. Now, add milk, vanilla and beaten eggs until just combined.
    3. Switch to hook attachment.
    4. Add butter one tablespoon at a time.
    5. Mix until dough no longer clings to bowl and becomes elastic. This process could take 5 minutes or longer.
    6. Cover and let rise until doubled in size. If the temperature in your house is cool, then check to see if your oven has a proofing setting. Another trick is to place your bowl on top of a bowl of warm water.
    7. Once doubled in size, add pearl sugar and completely incorporate.
    8. Roll into 10 even sized balls.
    9. At this point, you can immediately cook the waffles in the waffle maker. I refrigerate the dough overnight to allow a little bit of the sugar to dissolve into the dough. This helps to reduce the amount of sugar that gets caramalized in the waffle maker.
    10. Cook for about 1 minute on each side until golden brown.

    3 1/2 cups bread flour

    1 packet of instant yeast

    2 tbs brown sugar

    1/2 tsp salt

    3/4 cup lukewarm milk

    2 beaten eggs – room temperature

    1 tbs vanilla

    2 sticks unstalted butter cubed – room temperature

    1 1/2 cups Belgian Pearl Sugar
