Chicken Ingredients:

1 ½ lbs boneless skinless chicken thighs, cut into bite-sized pieces

3 large eggs

1 cup corn starch

1 cup all-purpose flour

2 tsp garlic powder

2 tsp salt

2 cups oil for frying

Sauce Ingredients:

¾ cup orange juice

¼ cup soy sauce

½ cup sugar

2 tbs rice vinegar

1 tbs toasted sesame oil

½ tsp red pepper flakes

1 tbs corn starch plus 1 tbs water

Sliced green onions

Candied Walnuts Ingredients:

1 cup walnuts

¼ cup sugar

1 tbs unsalted butter

½ tsp cinnamon

Instructions

  1. Begin with the Candied Walnuts: Set the cooking process in motion by preparing the candied walnuts.

  2.   In a skillet placed over medium-high heat, combine your walnuts, sugar, butter, and cinnamon.

  3. Continue to stir the mixture until the sugar reaches a melting point. This should take about 5 minutes.

  4. Once the sugar has completely melted, promptly transfer the walnuts onto a parchment paper or silicone mat.

  5. To prevent the walnuts from sticking together, quickly separate them using two knives. Let them cool and set aside.

  6. Prep the Chicken: Now shift your attention to the chicken.

  7. Grab a medium-sized bowl and mix together the flour, corn starch, salt, and garlic powder.

  8. In a separate bowl, whisk the eggs.

  9. Proceed to dip each piece of chicken into the whisked eggs.

  10. Next, coat each piece in the flour and corn starch mixture.

  11. Continue with steps 10 and 11 until all the chicken pieces are well coated.

  12. Let the coated chicken rest while you heat up the oil.

  13. Pour oil into a skillet and heat it up over medium-high heat.

  14. Fry the chicken pieces until they turn a golden brown color. Each side should take about 3-4 minutes to reach this stage.

  15. Once fried to perfection, remove the chicken pieces and place them on a wire rack or paper towel-lined plate to drain any excess oil.

  16. Let the chicken rest while you switch gears to prepare the sauce.

  17. Prepare the Sauce: In a separate bowl, mix together the orange juice, soy sauce, rice vinegar, sugar, sesame oil, and corn starch mixture.

  18. Transfer the sauce mixture into a saucier pan or skillet and place it over medium-high heat.

  19. Stir continuously until the sauce begins to thicken. This process should take about 8 minutes.

  20. Once the sauce has thickened, add in the fried chicken and sliced green onions. Stir until all the chicken pieces are generously coated with the sauce.

  21. Serve the Dish: Serve the orange chicken over a bed of rice.

  22. As a finishing touch, sprinkle the candied walnuts that you prepared earlier on top.
