2 cups of fresh pineapple chunks (about 1 medium-sized pineapple)

1 cup of sugar

1 cup of water

1 teaspoon of lemon juice (optional)

Instructions

  1. Peel and core the pineapple, then cut it into small chunks. You will need about 2 cups of pineapple chunks for this recipe.

  2. Place the pineapple chunks into a blender and process until smooth. If you prefer a chunkier syrup, you can pulse the pineapple to your desired consistency.

  3. In a medium-sized saucepan, combine the blended pineapple, sugar, and water. Stir well to combine.

  4. Over medium heat, bring the mixture to a boil, stirring occasionally to prevent sticking or burning. Once it reaches a boil, reduce the heat to low and simmer for about 10-15 minutes, until the mixture thickens slightly.

  5. If using, stir in the lemon juice. This will add a bit of tartness to balance the sweetness of the syrup.

  6. Using a fine-mesh strainer, strain the syrup into a clean jar or container, discarding the solids.

  7. Allow the syrup to cool to room temperature, then cover and refrigerate. It will thicken further as it cools.

  8. Your homemade pineapple syrup is now ready to use! Enjoy it over pancakes, in cocktails, or as a sweetener in various recipes.
