3 ripe bananas
1 cup grated carrots (use the small side of a grater)
1 stick (1/2 cup) unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
2 large eggs
1/4 cup vegetable oil
1/2 cup rum raisins
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup walnut pieces
1/2 teaspoon salt
1/2 teaspoon vanilla extract
Start by preheating your oven to 350°F (175°C). Grease and flour a bread loaf pan. For easy removal, you can also line it with parchment paper.
