3 ripe bananas
1 cup grated carrots (use the small side of a grater)
1 stick (1/2 cup) unsalted butter, softened
3/4 cup brown sugar
1/4 cup granulated sugar
2 large eggs
1/4 cup vegetable oil
1/2 cup rum raisins
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 cup walnut pieces
1/2 teaspoon salt
1/2 teaspoon vanilla extract
Start by preheating your oven to 350°F (175°C). Grease and flour a bread loaf pan. For easy removal, you can also line it with parchment paper.
In a stand mixer, cream together the softened butter, granulated sugar and brown sugar. This should take about 2 minutes, and you want the mixture to become light and fluffy.

Allow the banana bread to cool in the pan for about 10 minutes. Then, using the parchment paper for easy lifting, transfer it to a wire rack to cool completely.
