- Mixing Bowls: You'll need at least two mixing bowls - one for the wet ingredients and another for the dry ingredients. This helps ensure even distribution of the components.

- Fork or Potato Masher: A fork or a potato masher is essential for mashing the ripe bananas. Make sure your bananas are well mashed for a smoother batter.
- Whisk: You'll need a whisk for combining the dry ingredients - flour, baking soda, and salt. This ensures uniform distribution and prevents clumps.

- 1 stick (½ cup) unsalted butter, softened
- ¾ cup brown sugar
- 2 large eggs
- ¼ cup vegetable oil

Directions for Carrot Cake Banana Bread
Let's dive into the step-by-step process of creating this mouthwatering carrotcakebanana bread:
- Preheat the oven: Start by preheating your oven to 350°F (175°C). Grease and flour a bread loaf pan (9.25 inches long x 5.25 inches wide x 2.75 inches deep). For easy removal, you can also line it with parchment paper.
- Cream the butter and brown sugar: In a stand mixer, cream together the softened butter and brown sugar. This should take about 2 minutes, and you want the mixture to become light and fluffy.
- Add oil, eggs, and vanilla: Incorporate the vegetable oil, large eggs, and vanilla extract into the butter and sugar mixture. Mix until everything is well combined and the mixture is creamy.
- Mash the bananas: In a separate bowl, mash the ripe bananas with a fork. The riper the bananas, the sweeter and more flavorful your banana bread will be.
- Combine bananas, carrots, and rum raisins: Add the mashed bananas, grated carrots, and rum raisins to the mixing bowl with the wet ingredients. Stir until all the components are thoroughly combined.
- Prepare the dry ingredients: In another bowl, combine the all-purpose flour, baking soda, and salt. Give it a good whisk to ensure even distribution of the dry ingredients. Toss the walnut pieces into the flour mixture to coat them evenly. This step helps prevent the walnuts from sinking to the bottom of the bread during baking.
- Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients. Mix gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.
- Bake to perfection: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-60 minutes or until a toothpick or knife inserted into the center comes out with just a few moist crumbs attached. The exact baking time may vary, so keep an eye on it in the final minutes.
- Cool and remove from the pan: Allow the banana bread to cool in the pan for about 10 minutes. Then, using the parchment paper for easy lifting, transfer it to a wire rack to cool completely.
Can I Omit the Rum Raisins and Walnuts?
Absolutely, you can tailor this carrot cake banana bread to your preferences, and that includes omitting the rum raisins and walnuts if you wish. Here's how to make this delicious treat without them:
- Omitting Rum Raisins: If you're not a fan of raisins or prefer to skip the rum-soaked variety, simply leave them out of the recipe. The banana and carrot flavors will still shine through, providing plenty of natural sweetness and moisture.
- Omitting Walnuts: Likewise, if you have a nut allergy or just prefer a nut-free version, you can omit the walnuts without compromising the overall quality of the bread. Your banana bread will still have a delightful texture and flavor.
Feel free to get creative and customize this recipe to suit your taste. Whether you choose to include or omit these ingredients, you'll still end up with a scrumptious carrot cake banana bread that's sure to be a hit.

What am I missing? Where does the 1/4 cup of granulated sugar go? I’m going to risk it and leave it out, since brown sugar, carrots and bananas are already sweet. I’m not making the frosting. Fingers crossed! I’ll give it 4 and update later.

The granulated sugar is creamed together with the butter and brown sugar. Sorry that it wasn’t clear!

Omg! How did I miss that? Definitely my fault. I opted to add 2 T granulated sugar to the batter before I put it in the oven. Split the difference right? The bread is fantastic! I didn’t need to add any butter to the slices and could just taste it from the bread itself. I left the nuts out and as previously stated, I didn’t make the frosting. But I would definitely make this recipe again, and it was plenty sweet, so my sugar mistake can be called a happy accident.
