- I use a mortar and pestle to grind the thyme, oregano, and basil. You can also use a spice grinder. The reason that I grind them myself is because I usually can’t find them already ground, plus I can grind them to my preference, whether it be coarse or fine or somewhere in between.
- Sauteing the spices before incorporating the ingredients into the cream sauce will increase the depth of flavor, which is why you see it done often in Indian cuisine.
- This recipe uses habanero powder. If you can’t find it in stores, then you can order it on Amazon.

- Bow tie pasta or any other noodle form you have on hand. There is no strict rule when it comes to selecting pasta
- Canola oil is used to sauté the shrimp to perfection.
- Preferably purchase raw shrimp instead of cooked shrimp. When you cook shrimp that’s already cooked it can give the shrimp a rubbery texture.
- Cajun seasoning, this recipe lets you make your own blend instead of buying a pre-made cajun blend that won’t give you the same flavor.
- We will require butter to prepare the mixture, which will serve as the foundation for the sauce.
- Heavy cream is what gives the sauce its creamy consistency and rich flavor.
- If possible, purchase parmesan cheese on a brick and shred it yourself. Pre-grated Anti-caking chemicals are occasionally added to parmesan to keep it from clinging.
- For garnishing and taste, freshly chopped parsley is the best way to go.

Ingredients
For chicken and shrimp:
1lb large raw shrimp
1 chicken breast
2 tsp salt
2 tsp garlic powder
2 tsp onion powder
2 tsp dried thyme
2 tsp dried basil
2 tsp dried oregano
2 tsp smoked paprika
1 tsp cayenne pepper
1/4 cup canola oil
Instructions
- Grind oregano, thyme, and basil.
- Add ground oregano, thyme, and basil to other seasonings.
- Flatten chicken breast to cook more evenly and faster.
- Use half of season mix for chicken breast. Refrigerate for at least 1 hour.
- Add canola oil to skillet over medium high heat.
- Cook chicken until browned on both sides (about 4 minutes per side). Remove and set aside.
- Let chicken rest for 10 minutes and then cut into bite sized pieces.
- Season shrimp.
- Add shrimp to skillet over medium high heat.
- Once shrimp curls into a “C” shape, turn it over and cook the other side (about 1 minute per side).
- Remove from skillet and set aside.

Ingredients
2 cups heavy cream
1/4 cup chicken stock
1 1/2 cups freshly grated parmesan
4 tbs tomato paste
3 tsp garlic powder
1 1/2 tsp salt
2 tsp dried thyme
2 tsp dried oregano
2 tsp dried basil
3 tsp onion powder
1/8 tsp ground habanero (or 1/4 tsp if you like it spicy!)
1 tbs chopped fresh flat leaf parsley
4 tbs butter
Instructions
- For stronger flavor, grind oregano, basil, and thyme.
- Add butter to pan and melt over medium heat.
- Add all dried seasonings and sauté until fragrant (about 30 seconds).
- Add chicken stock and stir.
- Add tomato paste and stir until combined.
- Add heavy cream.
- Add grated parmesan and stir until all cheese has been melted.
- Cook over medium heat for 10 minutes stirring occasionally.
- Cover and set aside.
- Cook pasta according to package directions.
- Drain pasta and add back to pot.
- Add Cajun cream sauce, chicken and shrimp and combine.
- Garnish with chopped parsley or basil.
- Serve and enjoy!
