7UP Cake Recipe with Lemon Glaze

For cake:

3 sticks unsalted butter - softened

5 eggs - room temperature

3 cups all purpose flour

3 cups sugar

3/4 cup 7UP

For lemon glaze:

4 cups powdered sugar

6 tbs lemon juice

Zest of two lemons

Instructions

1. Making the cake:

2. Preheat oven to 325 degrees.

3. Add butter and sugar to the bowl attached to your stand mixer and beat on medium until fluffy, about two minutes. You should notice the color change, too.

4. Add eggs, one at a time until combined.

5. With the blender on low speed, add half of the flour and combine.

6. Add half of the 7UP and combine.

7. Add the remaining half of the flour and combine.

8. Then, add the remaining 7UP and combine.

9. Spray cake pan with baking spray, flour the pan and then pour in cake batter.

10. Bake at 325 degrees for 70-80 minutes or until knife comes out clean.

11. Allow cake to cool in pan for 15-20 minutes before turning out onto cooling rack.

12. Making the glaze:

13. In a bowl, add all ingredients and mix until smooth.

14. Pour over completely cooled cake.
